2 red peppers

2 green peppers

2 yellow peppers (all cut into quarters)

1 large eggplant (eggplant), sliced ​​lengthwise

2 zucchini, sliced ​​lengthwise

 

Ingredients for mixture

90 ml of olive oil

1 large red onion, sliced

80 gr. dried grapes

1 tbsp tomato paste

 

Ingredients for aromatic tomato sauce

400 ml. fresh tomato juice

200 gr. basil leaves

200 ml of olive oil

Place the peppers, with the skin on, on the grill and grill. Cover and set aside. Once they have cooled slightly, peel them.

Place the eggplants and zucchini in separate baking trays. Brush with oil. Season with salt and pepper and bake for 20 minutes at 180ο C until soft.

In a pan, sauté the onion, raisins, and tomato over low heat until all their moisture is gone.

In a small saucepan, add the tomato juice. Season with salt and pepper and stir lightly.

Line the pan with cling film and leave the film to protrude. Place a layer of peppers on the base. Add 2-3 tablespoons of the mixture and then pour 4-5 tablespoons of the aromatic tomato sauce. Continue with the eggplants, add another 4-5 tablespoons of tomato sauce and onion. Continue with the zucchini and finish with another layer of pepper. Pour the remaining tomato sauce. Shake the pan so that the juice goes everywhere. Close the edges of the cling film and place in the refrigerator for about 2-3 hours. Serve with basil leaves and oil.

How to make basil oil

In a small saucepan of boiling water, add the basil leaves and blanch for 2 minutes. Place the leaves in a bowl of cold water and ice cubes. Once it has cooled and retains its vibrant green color, place it in a blender with olive oil and blend for 1 minute. Pass the mixture through a fine sieve and you have a wonderful and aromatic basil oil.
