This is the recipe that I described on my latest episode of “The Weekend Show, With Paul James” on Greek News & Radio Fl.
If any of you managed to listen to the show, one of my listeners asked if you were in a Chinese restaurant in Greece… would the Fried Rice be called “Greek Fried Rice”, and as many of you who know me… it takes a lot to leave me speechless…. Anyway here’s my version of A Greek Fried Rice Dish.
GREEK FRIED RICE
INGREDIENTS
-Dill
-Fresh oregano
-1 medium-sized onion finely sliced
-Bunch Spring onions finely sliced
-Handful of olives pitted and halved
-Feta sprinkled on top
-Gigantes beans
-1 beaten egg
-Lemon juice + zest
-Cooked basmati rice
-Greek olive oil
-1 tsp of Garlic paste
-Vegetable stock
METHOD
In a large frying add the olive oil until it starts to sizzle, then add the onion and sauté for a few minutes. Add the garlic paste and give it a gentle mix.
Now add the cooked rice which has been cooked in vegetable stock with fresh oregano added, which has been drained and left to go cold once it’s been cooked in the stock.
Mix well then add the gigantes beans and olives.
Cook until thoroughly cooked and hot.
Then push the rice to the outer edge of the pan leaving a well shape in the middle.
Now add the egg in the centre and scramble. Once done stir well incorporating the rice.
Serve on a warm plate sprinkled with dill a splash of lemon juice and a scattering of crumbled feta. Accompanied by a Greek marinated chicken breast.
